Ingredients:1 1/2 cups to 2lbs. of green cabbage; trimmed and shredded
1 medium red onion; halved and thinly sliced
1 carrot; peeled and diced
1/2 green bell pepper; cored, seeded and finely chopped
1 tablespoon of unsalted butter
1 cup of cooked ham; cut into strips
1 cup of mayo
1/2 cup of sour cream
2 tablespoons of red wine vinegar
1 1/2 tablespoons of Dijon mustard
1/2 teaspoon caraway seeds
1 small tomato; seeded and cubed
3/4 cup of white cheddar cheese; cut into strips
1 1/2 tablespoons of chopped, fresh parsley
Salt
Freshly ground black pepper
Cooking Instructions:In a large bowl, combine the cabbage, onion, carrot and green pepper. In a small skillet, over medium-low heat, melt the butter and saute the ham until lightly browned. Transfer the ham, using a slotted spoon to the vegetable mixture in the large bowl.
In a medium bowl, combine the mayonaise with the sour cream. Beat the vinegar, mustard, caraway seeds and any ham drippings. Pour this over the cabbage mixture. Mix thoroughly. Add salt and pepper to tast. Add the tomato and cheeses, toss lightly and sprinkle with the parsley. Serve at room temperature.
